Week 1 Wrap Up

So it’s Sunday night and I didn’t do too shabby. Ate out 2 meals this weekend, but the one on Saturday for lunch was a fresh salad dish from our favorite pho place (Pho Van) so I could’ve made something similarly low calorie at home if I was more talented at vietnamese cuisine. Tonight I went with the boys to Buffalo Wild Wings (which gives me good memories of Uni. and they just got the first one here) which was the weekly “cheat meal.” It definitely isn’t a place I’ll regularly go and I was counting the whole time (portion control big time!). Calories for the day still came under 1500.

Best meal this weekend so far was trying Cindy’s protein crepes/pancakes for lunch, made with just oats, nonfat cottage cheese, eggs whites, vanilla and cinnamon. Topped with thawed frozen (unsweetened) berries (added spenda to kick it up a bit) and sugarfree maple syrup. OMG these were REALLAY GOOD! I’m not sure on the calories but they can’t be much more than a bowl of oatmeal, some egg whites, and the cottage cheese.

Main changes so far are reduction in visible cellulite on back of my thighs (ick so gross!), bum isn’t feeling as “Badunkadunk” and less shelfy on the top if you know what I mean. Bewbs aren’t quite as plump, but I think thats a cyclical thing. Tum is definitely flatter too. What a difference only a week can make. I’ll probably re-measure tomorrow to see if anything has come down too.

And can I get some comments? I’m lonely! I definitely am more motivated to post (and stay on track) if I know I have some readers again.

    Hello darling! :) I am here and reading! For some reason, I had huge problems registering and logging in, but they are all rectified now. PHEW! Rock on! Looks like you are doing great! Dig the little checkboxes. You go girl! Just seeing them reminds me I should take my multivit and do some abs! I got cardio in today, but I could use a little more. :)

    I dig pho too. Healthy and yummers. It could use a few more veggies, but you can’t win on all counts all the time.

    So true that a week can make a big difference. I’ve been doing pretty well this week (though I am not as militant as you) and can already see some results. I’m letting that motivate me but not allowing it to make me cocky. :) What a difference just being really conscious of everything makes. Writing everything down really helps too. I’m trying to find a journalling style that works for me. Sometimes I really write it all down and count, other times I’m just getting down the general gist. Either way, I’m not letting all hell break loose.

    Another reader commenting to send you support. And hey, thanks for the motivation (and the crepe recipe!). I made a Vietnamese soup with pork meatballs this weekend that reminded me of my favorite soup from Pho Van–it was filled with all kinds of flavorfl, healthy ingredients like vermicelli noodles, ginger, garlic, fish sauce, cabbage, carrots, etc., and I could just feel myself gearing up my immune system for cold season with each bowlful. :) Anyway, if you want the recipe, let me know and I’ll e-mail it to you. Yum!

    steffany: you’re from Portland too? (with the Pho Van reference, threw me off… unless they have locations elsewhere… I always see Pho places but usually diff. named) :) I actually am not a big fan of Pho soup proper, but love their salad vermicelli noodle bowls with grilled meat and salad rolls. MMM!! Lots of cucumber, cilantro, carrot, with nuoc mam (scary its anchovie dripping sauce but still GEWD!)
